I know I’m close to showing when yesterday the hus walked across the gym to pat me on my stomach. In my head I was thinking – OK you really didnt want people to think I was fat, what a sweet gesture:) Ha!
It’s rare that I share a non baking recipe but YumSugar had one too good to not share.
Serve Up These Simple Salmon Cakes in 20 Minutes or Less
The Salmon Cakes were easy and quick to make. If you aren’t a huge salmon fan you could substitute the fish that floats your boat. But you should give it a try because the taste isn’t too fishy.
The recipe calls for a few ingredients, most you probably already have:
1 pound skinless salmon fillet
2 scallions, roughly chopped
1/4 cup panko bread crumbs
2 tablespoons Dijon mustard
1 tablespoon olive oil
1 scallion, finely chopped
1/3 cup sour cream, optional
I didn’t have a food processor and was able to finely chop the salmon. You could play around with shallots or other onions for the scallions, and I am not a huge fan of Dijon so I used another type of mustard. Point is, this is easy enough to make it your own! This takes the cake as a weekly staple on our menu.

Ahhh the bumb!! I made corn fritter/pancake things the other night. 1 ear of corn (partially cooked), 1/2 zucchini grated, 1 egg, 3 tbsp flour, 1 tbsp corn meal, fresh cilantro and parsley, salt and pepper. Mix it all up and cook it just like burgers.

Yum! I love Salmon but the rest of my family thinks the flavor is too strong. I think I will make these to top my lunch salads this week.
Yea you could try with another fish, but it’s super quick for a lunch:)

My grandma made them from a can when I was younger so thank jeebus I’ve learned better! Thx for the love my sweets!

My mom used to make salmon patties when I was young. I smothered mine with ketchup because I’m classy like that.
I was just saying how I had them from a can. Gross! I love ketchup so I won’t judge.
